When you press the "Finalize Inventory" button on the main Brewing Session screen, you are telling ProMash you now wish to subtract the ingredient amounts contained in the session from your ingredients databases.

You are given a warning dialog to ask you if you really want to do the operation, as you are only permitted to subtract ingredients in the brewing session once (for each individual session).
