Professional Scale at SpeakEasy Lagers and Ales

| I had the privilege of starting my professional brewing experience at a
place called SpeakEasy Ales and Lagers in San Francisco. The brewery was
started by the former owners of San Francisco Brewcraft (the best homebrew
shop in San Francisco), whom I had become good friends with. It was
actually Eric and Steve (2 of the 4 founders) who convinced me to make
ProMash a commercial product many years ago. So, for 2 years (from December 1997 through December 1999) I worked at SpeakEasy Ales & Lagers in San Francisco as an Assistant Brewer 2 days per week. It was the best brewing experience I could have ever asked for. As it was (and remains) a brewery and not a brew-pub, we were not bothered by customers and such, focusing on the brewing only. Since my days at SpeakEasy, the brewery has expanded and moved to a new location. They remain one of most well respected breweries in the Bay Area and can be found on tap throughout the city.
