Jon, if I can jump in here, what kind of Munich and Vienna were you using that was undermodified? In my experience, all the Munich and Vienna I've used has been very well modified...it's kinda hard to find any undermodified malts at all these days. In addition, I've made quite a few all Munich beers and experienced yeilds quite comparable to pale malt.

: We used the defaults, under the same assumption you have, that at least it would be close. And, because they were under-modified, we stepped it for ungodly times.

: My partner has the recipe, I'll try to get them. Would higher modified malts (such as 2 row, what I called "base malts" previously) have helped?
