All Almerican Ale
12/01/01
No that's not a mis-spelling in the name...This is a very interesting All Grain recipe from Alex MacGillivray who says: "When I designed this recipe I was shooting for exactly what I fermented. The color was crystal burgundy when held up to the light and the strong hop aroma and flavor balanced the alcohol strength into a cold thirst quencher. The rice did a fine job lighting up the body. However I used boiled whole basmati rice, which added a pleasant nutty after taste. Also note the thick mash of 1:3 ratio. I feel important to the mash schedule. "
Brewer - Alex MacGillivray

Angry American Ale
8/21/03
A terrific looking All Grain recipe from Chris Schroeder whos says:

"The first version of this red ale was boiled on Sept 8, 2001. Little did I know, that three days later would be a dramatic tragidy to this country. Since then, I have brewed this beer anually, as a tradition and tribute to those that suffered that day...even more so...for those that were serving, and perished......Hope others can brew this...enjoy the "Sweetness of Freedom"...and "Bitterness of 9-11"...and "Never Forget"."

Pyrite Mild
*NEW* 04/23/04
Nice all grain recipe from brewer John Oberley who says "even though it has a low level of chocolate malt, it has a pronounced chocolate flavor, with just enough black malt in it so you know you're not drinking an amber American. The one addition of Challenger at early part of the boil is keeping with the milds having no real hop flavor or aroma. This one is my favorite of all the beers I've done. I call it "Pyrite" for the "fool's gold" aspect to it. What you get when you drink it isn't what you expect from looking at it".

Mule Kick Bitter
*NEW* 4/23/04
Very nice all grain recipe from brewer John Oberley who says "The Mule Kick Bitter is an ESB that came out nice and smooth, well balanced in spite of the .685 BU:GU ratio. The regular granulated sugar listed in it was carmelized by me on a stovetop. When it got to the shade of brown I wanted, I added it to the mash. It seemed to add a more "genuine" caramel flavor than does caramel malt. I don't believe the beer would taste the same without it. The name Mule Kick has no special significance other than it's the name of my brewery".

Light Ale Cream Ale
CACA Ala Renner
8/15/01
This is an ale with about 25% corn in the grist and hops that are similar to those available pre-prohibition. Jeff Renner, famous for defining the center of the brewing universe, pioneered Classic American Pilsners as homebrews.

"I brew ales at home and took his suggestions and others from HBD.org to make an ale version of CAP. A mini mash is required to convert the flaked maize to sugar. It's really simple, I did it in the oven for 1hour at 150-155 degrees. The beer is very drinkable and has enough hops to be interesting to me. The color is a very pale gold. I used Alexander's pale malt extract which is very light. Yummy! "
